Ala Pastor

I recommended Nachos Al Pastor some time ago. It was great but since then we almost stopped eating meat so we decided to make a vegetarian version. But we didn't want to use neither seitan, not jack fruit, nor soy fake meat. I used the original recipe, with modification, the amount is enough for a light lunch for two hungry people. ^^*~~

Najpierw robimy sos - do blendera wrzucamy:
- 1/2 puszki chiles w adobo (do dostania w supermarketach)
- 2 Ł papryki achiote w proszku
- 3 ząbki czosnku
- 1/2 ł kminu
- 1/2 ł oregano
- 1/2 ł soli
First, we make the sauce, into the blender goes:
- 300 ml of pressed apple juice (there is pineapple juice from the can in the original recipe, but I forgot to buy it)
- 1/2 chopped onion
- 1/2 can of chiles in adobo
- 2 Ł of achiote pepper powder
- 3 cloves of garlic
- 1/2 ł cumin
- 1/2 ł oregano
- 1/2 salt

We get the amount suitable for three cooking portions, so: in the pan place 1 can of mixed sweet corn and red beans with 1/3 of the sauce, and fry till reduced. Have a taste! If it's too hot for you, add 50 ml of cream, yoghurt or ayran.

Heat the oven (grill) and place one bag of nachos (or you may make your own nachos from the corn tortillas). Pour the corn/beans mixture on the nachos and grate about 80 g of cheddar cheese over it. Bake till the cheese melts.

Podajemy z salsą (posiekane: pomidor, cebula, chilli, sól/pieprz, oliwa), kawałkami dojrzałego awokado, sokiem z cytryny i dużą ilości kolendry. *^V^*
Serve with salsa (chopped: tomato, onion, chilli, salt/pepper, olive oil), pieces of ripe avocado, lemon juice and a good handful of coriander. You make add pieces of canned pineapple if you used the juice but my husband says it might be too sweet. Let me warn you, you'll eat it in no time and will fight over each spoonful, and you'll want to make more and more of it! *^V^*

Tyle na dzisiaj, bo idę oglądać mecz! ^^*~~
That's all for today, I'm going to watch soccer now! ^^*~~
